Coconut Lentil Dahl



PREP: 10 minutes

COOK: 8 hrs (slow cooker)


1 CupDry Lentils (Green, Red or other as you like…)
1 CanCoconut Milk (full-fat or light) 
1 CupVegetable stock
1Onions (diced)
1 tspGarlic powder
1 tspGinger powder
1 tspCoriander
1 tspCurry power
1 tspTurmeric
1 tspCayenne pepper
1 tspRed pepper flakes
1 tbspSour cream
1 tbspExtra virgin olive oil
Fresh cilantro for serving
Cook white rice for serving


  1. Soak the dried lentils in water for a few hours (overnight recommended).
  2. Cook the onions, ginger and garlic in the olive oil for 5-10 minutes over medium heat, stirring frequently until soft.
  3. In slow cooker, add lentils (remove water first), cooked onions, and all other ingredients.
  4. Cook on low for 8 hrs.
