Everyone will love eggplant this way!
PREP: 20 minutes
COOK: 20 minutes
|1||large eggplant, peeled and cubed|
|1 cup||shredded cheese (pick your favorite)|
|1 cup||bread crum|
|1 tsp||garlic powder (or minced)|
|1 tsp||chilli powder (or any other pepper you prefer)|
|1 tbsp||Italian seasoning|
- Step 1 – Place eggplant in a microwave safe bowl and microwave for 3 minutes. Mix eggplant cubes and microwave another 3 minutes. The eggplant should be tender, cook another 3 minutes if the eggplants are not tender. Drain any liquid from the eggplants and mash.
- Step 2 – Combine cheese, bread crumbs, eggs, Italian seasoning, onion, garlic and chilli powder with the mashed eggplant. Mix well.
- Step 3 – Shape the eggplant mixture into patties. Heat oil in a large skillet. Drop eggplant patties one at a time into skillet. Fry each side of the patties until golden brown, approximately 5 minutes on each side. Patties can be frozen before frying and cooked later.
