Eggplant Croquettes

INGREDIENTS

1large eggplant, peeled and cubed
1 cupshredded cheese (pick your favorite)
1 cupbread crum
1chopped onion
1 tspgarlic powder (or minced)
1 tspchilli powder (or any other pepper you prefer)
1 tbspItalian seasoning

DIRECTIONS

  • Step 1 – Place eggplant in a microwave safe bowl and microwave for 3 minutes. Mix eggplant cubes and microwave another 3 minutes. The eggplant should be tender, cook another 3 minutes if the eggplants are not tender. Drain any liquid from the eggplants and mash.
  • Step 2 – Combine cheese, bread crumbs, eggs, Italian seasoning, onion, garlic and chilli powder with the mashed eggplant. Mix well.
  • Step 3 – Shape the eggplant mixture into patties. Heat oil in a large skillet. Drop eggplant patties one at a time into skillet. Fry each side of the patties until golden brown, approximately 5 minutes on each side. Patties can be frozen before frying and cooked later.
