|1 1/2 cup||cooked basmati rice|
(As an alternative, frozen microwaveable bags of rice work quite well )
|1/2 cup||chopped mushrooms|
|1/2 cup||green peas|
|1/2 teaspoon||cumin powder|
|some||red and/or green onions (chopped)|
|2-4 tbsp||extra virgin olive oil (or 1/2 stick of butter)|
Heat oil in a pan. Add Green peas and mushrooms together in the pan on Med high flame. If you are using chopped red onions, include them at this time. When veggies are almost cooked (7-9 min), add the cumin powder. Stir for a minute. Add the rice and stir for 2 min. Stir longer if starting with room temp or cold rice.
TIP: not stirring the cumin powder will make it burn and stick to the bottom of the pan.
Remove from pan and garnish with green onions if desired.
