INGREDIENTS
1/2 pound | salmon filet |
1 tsp | thai red curry paste (use 1.5 tsp if spicy is desired) |

1/2 tsp | extra virgin olive oil |
1/4 tsp | turmeric |
1/2 tsp | dill |
2-4 tsp | juice from half a lemon |
DIRECTIONS
Mix ingredients for marinade (Thai curry paste, olive oil, turmeric, dill and lemon juice) and cover salmon filet with it. Let marinade for at least an hour. For best results, marinate overnight. TIP: Cutting small slits in the salmon fillet helps the marinade to soak in better.
Preheat oven to 425°. Place salmon in a greased baking pan with skin side down. Bake salmon for 12 to 17 minutes based on preference and oven performance. Finish off by turning oven setting to broil for five minutes. Remove from oven and garnish from green onions if desired.
